Food: National cuisine

We are pleased to present herebelow sample dishes of Moravian specialities:
HANÁCKÁ BAŠTA
This dish comprises boiled cabbage which is served in the centre of the plate, accompanied with potato dumplings filled with pork crackling, cut in half, and served with roast pork, fried sausage and bacon. Finally, the gravy from the pork is delicately poured over the food and garnished with fried onions. We recommend you have a glass of good beer with this meal.

Dish recommended for weddings:
SVATEBNÍ SVÍČKOVÁ NA SMETANĚ (Creamed Sirloin)
This traditional dish is a rich beef and bacon speciality. Freshly chopped vegetable (carrots, celery, parsley and onions) are lightly fried in oil before the meat is added with a little water. We then add vinegar and lemon and the ingredients stewed until ready. Whilst stewing, the meat is turned and basted with its own juices together with more water. The meat is then taken out and butter, flour and water are added to thicken the remaining mixture. We bring this to the boil whilst stirring for 20 minutes, adding a little cream whilst cooking. The sauce is then sieved to separate the larger vegetable residue, and finished by adding salt, vinegar, sugar and boiled again for a short while. This dish is served with dumplings and decorates finally with a slice of lemon, whipped cream and a dash of cranberry sauce.

Our Speciality:
ZÁMECKÁ MOZAIKA (Castle Mosaic)
A chicken breast is beaten before salt and special grilling herbs and spices added. A slice of gherkin, a whole mushroom, sausage, fresh red pepper and Edam cheese are all put onto a skewer, and then enveloped by the prepared chicken breast. The whole preparation is then dipped in breadcrumbs and deep fried. Finally, we cut the breast in half and served with mashed potatoes or potato croquettes.
